This past weekend I sliced a few sweet potatoes, added some olive oil and salt and pepper and baked. I’ve been adding to salads this week for lunch – I heat them up a little first – love the flavor and different texture that it adds. If you’re tired of your salad routine – give it a try!

This week I’ve also been loving plain greek yogurt, natural peanut butter, unsweetened coconut, unsweetened cocoa powder, and a little agave. SO good!
If we make another outdoor swing – I think I’d make one like this!

Speaking of sweet potatoes, here's a side dish to try that was a step from a Rachael Ray recipe (she goes on and does something else, but my mom and I, sampling as we go, now stop at this point as we love it best right here!)
Slice sweet potatoes in half lengthwise, then slice along length making half moons (I use my food processor for that step). Saute with some olive oil, salt, black pepper and curry paste or curry powder. Amazing!!!
